Simon Rimmer and Elaine Paige served up a tasty Chicken Madras on today’s episode of Sunday Brunch.
The ingredients are: 4 chicken breasts, cut into 6 pieces each, 2 diced onion, 50g butter, 30ml veg oil, 10g salt, 6 cloves sliced garlic, 250g tomato puree, diluted down with 250ml warm chicken stock, 25g garam masala, 15g cayenne, 15g ground cumin, 10g turmeric, 8 crushed cardamom pods, 50mm piece grated ginger, 5g ground coriander, Juice of 1 lemon and Garnish with fresh chopped tomatoes, coriander and mint.
