Simon Rimmer served up tasty ham and cheese croquetas on Sunday Brunch.
The ingredients are: 60g butter, 500ml milk, 60g flour, 125g grated manchego cheese, 30g grated raw potato, rinsed and drained, 70g finely diced thick roast ham, cooked, 75g peas, 2 finely chopped spring onions, 1 tsp nutmeg, 100g flour, 2 eggs, 100g breadcrumbs, 100g polenta, Oil to deep fry, 1 tbs chopped parsley, Serve with garlic mayo and lemon.
