Si and Dave served up tasty French style chicken breast (poulet de bresse) with lemony artichokes and mushrooms on the Hairy Bikers – Chicken & Egg show.
The Bikers says: “Lemon and artichoke work perfectly in this luxury dish. Brining the chicken makes it rich and succulent.”
The ingredients for the chicken are: 180g sea salt, 180g caster sugar, 4 chicken breasts, plain flour, for dusting, 25g butter, 1 tbsp olive oil and salt and freshly ground black pepper.
For the artichokes: 4 globe artichokes, 1 unwaxed lemon, zest and juice, 25g butter, 1 tbsp olive oil, 1 shallot, finely chopped, 2 garlic cloves, crushed, 200g mushrooms, sliced, 200ml dry white wine and 1 bunch fresh basil, roughly chopped.
