In today’s episode of Paul Hollywood Pies and Puds, Paul took a trip to Yorkshire to find feta cheese made in the dales for his delicious spinach and feta parcels.
Feta cheese is cinnamons with Greece, but one cheese maker in Yorkshire set up in business 25 years ago to produce her quality cheese made with goat’s milk.
Cheesemaker Judy Bell and her family set up Shepherds Purse in the late 80s to make hand-crafted Greek style feta cheese. However, after a long running dispute over the name of the cheese with the Greek trademark owners and the EU, Judy had to change the name of the cheese to Fine Fettle Yorkshire cheese.
Shepherds Purse has been an award winning cheese-maker since 1987. Today, the next generation of Bells have taken the reins and Shepherds Purse cheeses are still being produced by hand on the family farm.
The cheese is the key ingredient in Paul’s spinach and feta parcel recipe and Judy brought along some for her delicious cheeses for the master baker to use in his dish.
These triangular pasties are based on a Lebanese speciality called fatayer, and use soft bread dough, rather than pastry, to enclose the filling.
