For his Salmon dish, Paul takes his inspiration from Russia and served up a salmon coulibiac on today’s Paul Hollywood Pies and Puds.
A coulibiac is a Russian dish consisting of a filled pie usually made with salmon or sturgeon, rice or buckwheat, hard-boiled eggs, mushrooms, onions, and dill. The pie is baked in a pastry shell, usually of brioche or puff pastry (Wikipedia definition).
Paul made his coulibiac with onions, mushrooms, salmon, eggs, zest of lemon and rice and spices selected by Indian chef Manju Malhi.
He fries onions, mushrooms, zest of lemon and rice and the spices and left to cool for 30 minutes. He then adds a selection of freshly chopped herbs and then place the rice mixture onto a layer of puff pastry.
He then adds cooked salmon on top of the rice follow by hard boil eggs on top of the salmon, then another layer of puff pastry is added to complete the pie.
The pie is sealed around the edges brushed with eggs yokes, left to cool in the fridge and then baked in the oven at round 180C.
