Phil’s fish Friday herb crusted haddock recipe on This Morning

Phil Vickery served up tasty herb-crusted haddock with a creamy black olive mash on This Morning.

The ingredients are: 4 x 200g pieces thick haddock, skin on, no bones, 2 tbsp olive oil, 2 tbsp unsalted butter, cold, 4 tbsp chopped herbs (parsley, basil, chives, coriander), 2 tbsp finely grated fresh parmesan cheese, 4 tbsp breadcrumbs (Panko are perfect), Pinch ground cumin, Salt and pepper, ½ egg white, lightly beaten (optional), 500g hot creamy mashed potato, 100g very finely chopped black olives, 1 small onion, finely chopped and softened for 5 minutes in a little butter and 300g kale, lightly boiled and sautéed in a little butter.
