John Whaite chicken and chorizo mug pot pie recipe on Lorraine

John Whaite served up tasty chicken thighs and chorizo mug pot pie to celebrate British Pie Week on today’s episode of Lorraine.

Ingredients: 2 tbsp olive oil, 500g boneless and skinless chicken thigh, trimmed of excess fat and diced, 250g chorizo sausage, cut into half moon slices, 2 leeks, shredded, 2 sprigs fresh thyme, Salt and pepper, 2 cloves garlic, minced, 500ml chicken stock, 1 yellow pepper, in small dice, 1 red pepper, in small dice, pinch of saffron threads, 50g crème fraiche, 320g packet ready-rolled puff pastry and 1 egg, beaten to glaze.
