Dean Edwards Caribbean cottage pie recipe on Lorraine

Dean Edwards served up a healthy but hearty Caribbean cottage pie for a great meal at the weekend on today’s episode of Lorraine.

The ingredients are: 500g lean minced beef, 1 large onion, diced, 1 green pepper, small dice, 1 red pepper, small dice, 4 cloves garlic, crushed, 1 tbsp fresh ginger, grated, 1 tbsp fresh thyme, leaves picked, 1 tbsp red wine vinegar, 1 tbsp jerk paste, 400ml tin coconut milk, 500ml carton tomato passata, 1 tsp ground allspice, Salt and pepper, 500g sweet potatoes, ½ tsp ground cinnamon and 2 tbsp fresh coriander, plus extra for sprinkling, chopped.
