Ainsley Harriott served up tasty Mumbai-style eggy bread with bacon, cherry tomato and chilli sauce on Ainsley’s fantastic Flavours.
The ingredients for the Eggy Bread are: 4 large eggs, 100ml whole milk, ½ tsp grated fresh ginger, ½ tsp ground turmeric, ½ tsp cumin seeds, toasted, lightly bashed, ¼ – ½ tsp Kashmiri chilli powder/deggi mirch, 1 green chilli, deseeded and finely chopped, 1 tbsp finely chopped fresh coriander, plus extra leaves to garnish, butter and oil, for frying, 6 thick slices of white bread (slightly stale is best), 1 red chilli, deseeded and sliced into rings, to serve (optional) and 8 rashers of thick-cut streaky bacon, cooked to your liking (optional).
For the Cherry Tomato and Chilli Sauce: 4 cm piece of root ginger, peeled, grated, 2 cloves of garlic, minced, 2-3 red chillies, deseeded, finely chopped, 1 x 400g tin of cherry tomatoes, 1 tbsp tomato puree, 4 tbsp soft brown sugar, 3 tbsp apple cider vinegar or white wine vinegar and ½ tsp sea salt.
