Mary Berry lasagne express sausage with pork and spinach sauce recipe on Mary Berry’s Absolute Favourites

Mary Berry cooks a no-fuss express hearty sausage lasagne with pork and spinach sauce that is super quick and perfect for a midweek supper on Mary Berry’s Absolute Favourites.

Mary says: “The lasagne can be prepared up to 1 day in advance and cooked when required; this helps the pasta to soften further, allowing the sauce to be absorbed.”

The ingredients are: butter, for greasing, 6 large dried lasagne sheets and 75g mature Cheddar cheese, grated.

For the pork and spinach sauce: 1 tbsp oil, 450g pork sausage meat, 1 tbsp plain flour, 1 red chilli, deseeded and finely chopped, 2 fat garlic cloves, crushed, 250g chestnut mushrooms, sliced, 200ml full-fat crème fraîche, 100g baby spinach, roughly chopped and salt and freshly ground black pepper.

For the tomato sauce: 500g passata, 2 tbsp sun-dried tomato paste, 1 tsp light muscovado sugar, 1 tbsp chopped fresh thyme leaves and 1 tbsp chopped fresh sage.
