Bryn Williams Game sausage roll with wild mushrooms recipe on Christmas Kitchen

Bryn Williams Game sausage roll with wild mushrooms and pickled walnuts for the festive season on Christmas Kitchen.

Bryn says: “These moist, hearty sausage rolls are packed with game and full of flavour – try them as canapés at a Christmas party.”

The ingredients for the game sausage roll: 200g minced pork belly, 300g minced mixed game (such as venison, pheasant and mallard), 2 free-range eggs, plus 1 free-range egg yolk, beaten, for egg wash, small handful fresh thyme leaves, 50g cooked chestnuts, finely chopped, pinch allspice, 1 x 500g packet puff pastry, plain flour, for dusting and salt and freshly ground black pepper.

For the garnish: 1 tbsp butter, 100g wild mushrooms, 50ml double cream and 1 tsp Dijon mustard.

To serve: 2 pickled walnuts, drained, chopped and 2 dandelion leaves.
