Andi Oliver fried chicken thighs with tamarind and smoked chilli barbecue sauce recipe on Andi Oliver’s Fabulous Feasts

Andi Oliver served up tasty fried chicken thighs with tamarind and smoked chilli barbecue chicken sauce on Andi Oliver’s Fabulous Feasts.

The ingredients for the tamarind and chilli barbecue sauce are: 3 garlic cloves, 1 tsp freshly picked thyme leaves, 2 spring onions, trimmed and cut into 4 pieces, 2.5cm piece fresh root ginger, peeled, 1 Scotch bonnet chilli (deseeded), 1 tbsp rapeseed or vegetable oil, 1 tsp yeast extract, 100g block of seedless tamarind paste (loosened with 100ml boiling water), 250ml pineapple juice, 100g dark brown sugar, 10g ground allspice, salt and black pepper.

For the chicken: 16 skin-on chicken thighs (cleaned, deboned and skin scored), 1 tbsp rapeseed oil, 10g ground coriander, 10g ground turmeric, 10g ground cumin, 10g paprika, 10g ground allspice, 1 tbsp soy sauce, 20g fresh root ginger, grated, 50g fresh thyme, leaves picked, 10g long red or green chilli, finely chopped and 200g tamarind and chilli barbecue sauce (from above).
