Simon Rimmer Cumberland pie with pickled red cabbage recipe on Sunday Brunch

Simon Rimmer served up a tasty Cumberland pie with pickled red cabbage on Sunday Brunch.

The ingredients are: 1 finely diced onion, 1 finely diced carrot, 750g beef mince (ideally 12-15% fat), 1 tablespoon miso paste, 1 tablespoon flour, 300ml strong beef stock, 50ml masala wine, 100g peas, Few sprigs thyme, 750g mash, 150g butter, 150g grated mature cheddar, 50g finely grated parmesan.

Serve with pickled red cabbage.
