Theo Michaels one pot roast chicken with carrots, potatoes and parsnips recipe

Theo Michaels served up a tasty one pot roast chicken with carrots, potatoes and parsnips on This Morning.

The ingredients are: 1 large red onion, halved, cut into 1 inch wedges, 250g new potatoes, larger ones halved, 3 carrots, peeled, halved lengthways and sliced at an angle, 2 parsnips, peeled, halved lengthways and sliced at an angle, Few sprigs thyme, 2 vine tomatoes, cut into thick chunks, 2 bay leaves, Good splash of extra virgin olive oil, 1 chicken stock cube, 1 whole chicken (1.3 kg), 100g fresh parsley, kept whole in bunches, 1 bulb garlic, halved widthways, 250ml rose wine (or white wine), Salt and pepper, to taste, 1 tsp dried oregano and 1 lemon.

Rustic bread, to serve.
