Galton Blackiston Charcoal Battered Halibut with Chips and Mayonnaise (The Burnt Offering) on James Martin’s Saturday Morning.

The ingredients are: 4x 200g Halibut fillets, skinned, 150g gluten free flour, 25g charcoal powder, 1 tsp lime juice, 400ml Sparkling water to combine, 1 red chilli, deseeded and finely chopped, 1 small bunch coriander, finely chopped, Salt, Pepper and 75g seasoned gluten free flour.

For the Sauce: 3 eggs yolk, 1 tsp Dijon mustard, 1 tbsp white wine vinegar, 1 lemon zest and juice, 400ml veg oil, Half shallot, finely chopped, 1 small bunch mint, finely chopped, 1 small bunch parsley, finely chopped, 1 small bunch chives, finely chopped, 25g gerkins, finely chopped, 2 tbsp baby capers.

For the chips: 4 Maris piper potato, peeled.

For the Garnish: 1 red chilli, finely shopped and Lime edge.
