Simon Rimmer served up delicious caramelized banana pancakes with toffee sauce on Steph’s Packed Lunch.

The ingredients are: 3 bananas, chopped.

For the pancakes: 100g plain flour, sifted, Pinch of salt, 2 medium free range eggs, 200ml whole milk, 75ml water and 50g unsalted butter, melted.

For the sauce: 100g soft dark brown sugar, 100g unsalted butter, 1 tsp vanilla extract, 50ml rum and 100ml double cream.

To serve: Whipped cream and Flaked almonds, toasted.
