Crystelle Pereira Pimped Up Baguettes recipe on Steph’s Packed Lunch

Crystelle Pereira served up tasty Pimped Up Baguettes ( Korean-inspired garlic bread and roasted grape, honey & feta crostini) on Steph’s Packed Lunch.

The ingredients for the Korean-inspired garlic bread are: 1 large baguette, 75g grated mozzarella, 2 spring onions, finely chopped, to garnish and 1 tbsp sesame seeds, to garnish.

For the gochujang sauce: 1 tbsp gochujang, ½ tbsp honey and 2 tbsp rice wine vinegar.

For the garlic butter: 6 garlic cloves, finely chopped, 115g unsalted butter, at room temperature, 90g cream cheese, 1 tbsp gochujang, ¼ tsp chilli flakes and ¼ tsp fine sea salt.

The ingredients for the roasted grape, honey & feta crostini: 240g black seedless grapes (approx. 24 grapes), 200g feta, 10 walnuts, skin on, 1 small baguette, 1 ½ tbsp runny honey, ¼ fresh fennel bulb, thinly sliced (optional), A bunch of fresh thyme, A pinch of fine sea salt and ground black pepper.

For the infused oil: 50ml olive oil, 2 garlic cloves, grated and ½ tbsp dried thyme.
