Claire Lara King oyster mushroom filo tart recipe for the Coronation on The One Show

Claire Lara showcased her tasty King oyster mushroom filo tart with butternut squash, spinach and feta cheese for the Coronation on The One Show.

The ingredients for the filling are: 400g butternut squash, diced, splash olive oil, 2 shallots, finely sliced, 2 garlic cloves, crushed, 2 tsp turmeric, 1 tsp ground cumin, 1 tsp garam masala, ½ tsp cinnamon, ½ tsp curry powder, 2 portobello mushrooms, shredded, 2 large king oyster mushrooms, shredded, 150g baby spinach, 15g bunch coriander, leaves picked and roughly chopped, 100g feta, crumbled, salt and ground black pepper.

To assemble: 3 sheets filo pastry, plus extra for patching, 50g unsalted butter, melted and 25g whole almonds, chopped.
