Delicious cookie style ginger bakes with vanilla, root ginger and natural sweeteners were enjoyed by the young heroes in the Kingdom Of Pershee Children and Teens novel.

The ingredients to make the delicious treats are: 75g (organic) self-raising flour, 75g spelt flour (or plain flour), 100g butter, a knob of fresh root ginger (approx. 5cm), 2 tsp ground ginger, 1 tsp cinnamon, 1 tsp nutmeg, pinch of salt, 1 1/2 tsp vanilla, 2-3 tbsp maple syrup, 10 dates or 75g currents and 50ml of water.
