Freddy Forster served up a tasty vegetable toad in the hole (sausage-free) on Steph’s Packed Lunch.
The ingredients for the batter are: 190g plain flour , 3 large whole eggs , 275ml whole milk , Pinch of salt and pepper, 1tsp Dijon mustard and 2tbsp chives, chopped.
For the roasted vegetables: 2 red onions, cut into small wedges , 1 green courgette, sliced , 1 head of broccoli, small florets , 20 pieces of cherry tomatoes , 150g tin sweetcorn, drained , 2 x handfuls of baby spinach , 10 leaves basil , 1tsp sumac spice , 150g Red Leicester cheese, grated and Olive oil.
To serve: Mixed leaf salad , 1 lemon, juiced and 3tbsp olive oil.
