Freddy Forster served up tasty Jamaican vegetable patties on Steph’s Packed Lunch.
The ingredients for the patty dough are: 300g plain flour, 1 ½ tsp curry powder, 1 ½ tsp turmeric, Pinch of salt, 160g unsalted butter, diced and chilled, 6-7tbsp ice cold water and 1 medium free-range egg, beaten.
For the vegetable mix: 2tbsp vegetable oil, ½ small onion, peeled and finely sliced, 1 large red pepper, cut into small dice, 250g medium potato, peeled and diced into 1cm dice, Good pinch of ground allspice, 100g carrots, peeled and grated, 3 spring onions, finely chopped, 75g red Leicester cheese, grated, 4tbsp tinned sweetcorn, drained and 1tbsp fresh coriander.
To serve: Small handful of rocket leaves, 2tbsp olive oil, ½ lemon, juiced and Hot pepper sauce.
