Jack Stein served up tasty Mediterranean lamb chops with feta and pomegranate on Steph’s Packed Lunch.
The ingredients are: 2 lemons, zested, 25g salt, 8 lamb chops, approx. 100g each and A little olive oil.
For the vinaigrette: 2tbsp extra-virgin olive oil, 2tsp pomegranate molasses, 1tsp lemon juice and ½ tsp salt.
For the feta cream: 100ml double cream, 50g finely crumbled feta cheese, finely crumbled, 100ml milk, ½ tsp salt and 1tbsp lemon juice.
To garnish: Good pinch of sumac, 100g pomegranate seeds and Small bunch of mint leaves.
