Georgina Hayden festive gemista (roasted stuffed vegetables) with Greek yogurt recipe on Saturday Kitchen

Georgina Hayden served up a festive gemista (roasted stuffed vegetables – onions, tomatoes and courgettes) with Greek yogurt on Saturday Kitchen.

The ingredients are: 4 onions, topped and tailed, 8 tomatoes, tops removed and reserved, 2 round courgettes, tops removed and reserved, 75ml olive oil, 2 tbsp tomato puree, 75g pine nuts, toasted, 250g medium grain rice, 50g golden raisins or sultanas, 10g flatleaf parsley, 2 tsp dried mint, 1 tsp ground cinnamon, 1 lemon, juice only, 650ml hot vegetable stock, sea salt and freshly ground black pepper.

To serve: 400g Greek yoghurt, 4 tbsp chopped fresh dill and large pinch dried red chilli flakes.
