The Hebridean baker (Coinneach MacLeod) served up delicious Christmas cookies with spiced rum minced meat on This Morning.
The ingredients for the mincemeat are: 175g currants, 175g raisins, 175g sultanas, 100g mixed peel, 1 cooking apple, 125g butter, 50g blanched almonds, 225g soft brown sugar, ½ tsp ground cinnamon, 1 tsp mixed spice, 1 orange, zested and juiced and 200ml brandy, rum or sherry.
For the cookies: 100g butter, 50g soft brown sugar, 50g plain flour, 100g oats, 3 tbsp mincemeat, 1 tbsp maple syrup or honey and Icing sugar, to dust.
