The Hairy Bikers’ miso and beer BBQ chicken with yuzu roasted aubergines and coconut sticky rice recipe

Si and Dave served up tasty miso and beer BBQ chicken, miso and yuzu roasted aubergines together with coconut sticky rice on The hairy bikers Go North.

The ingredients for the chicken are: 8 chicken thighs and drumsticks, skin on.

For the marinade: 150g miso paste, 100ml beer, 75g granulated sugar, 2 garlic cloves, crushed, 1 tbsp flaked dulse, 1 tsp sriracha chilli sauce (optional), salt and pepper.

To serve: 1 tbsp sesame oil, 1 tbsp sesame seeds, dried chilli flakes and bunch spring onions, finely shredded.

For the coconut sticky rice: 400g sticky rice, 4 lime leaves, 2 whole, 2 shredded, 300ml coconut milk, 1 lime, pared zest of 2 large pieces only and salt.
