Simon Rimmer black rice with fried fish recipe on Steph’s Packed Lunch

Simon Rimmer served up tasty black rice with fried fish and mayonnaise for a Spanish seafood surprise on Steph’s Packed Lunch.

The ingredients are: 1 onion, peeled and diced, 3 cloves garlic, 90ml squid ink, Zest and juice 1 lemon, Salt and Pepper, 400g paella rice, 800ml fish stock, 12 king prawns, peeled, tail on and deveined, 12 marinated anchovies, 4 small squid, cleaned, cut into rings (also keep the heads), 200ml buttermilk, 200g plain flour, 50g polenta, 1tsp chilli powder, 1tsp celery salt, 1tsp smoked paprika, 1tbsp turmeric and Oil to deep fry.

For the garlic mayonnaise: 200g mayo, Half head roasted garlic and Juice 1 lemon.

To serve: 50g parsley, chopped and 1 lemon, wedged.
