Gok Wan Tom yum soup with cherry tomatoes and spring onions recipe on Gok Wan’s Easy Asian

Gok Wan served up a tasty Tom yum soup with cherry tomatoes and spring onions on Gok Wan’s Easy Asian.

The ingredients are: oil for frying, canned straw mushrooms, 6 sliced baby sweet corn, hot water (enough for two soup portions), cherry tomatoes, spring onions and Thai curry paste.

For the Thai curry paste: 10 small Shallots, 6-7 kaffir lime leaves, inch fresh ginger, inch root galangal, 2 lemongrass stalks, 2 coriander roots, juice an zest of 4 limes, 2 dried chillies, 3 garlic cloves, fresh Thai basil, mint leaves, pinch of salt, 1/2 tbsp yeast extract and vegetable oil.
