John Whaite served up a tasty sweet and sour chicken stir fry with ginger and tomato ketchup on Steph’s Packed Lunch.
The ingredients for the Chicken and Batter: 4 chicken thighs, 50g cornflour, 100g plain flour, 1 tsp dried chilli flakes, ½ tsp baking powder and ½ tsp fine salt.
For the stir fry: Sunflower/olive oil, 2 carrots, peeled and finely sliced, 1 yellow pepper, finely sliced and ½ red onion, finely sliced.
For the sauce: ½ large mango, 4 tbsp tomato ketchup, 4 tbsp soy sauce, 4 tbsp water, 2 tbsp white wine vinegar, 2 garlic cloves, minced, 2cm piece fresh ginger, minced, 2 tsp cornflour and 1 tsp dried chilli flakes.
To finish: ½ mango, diced and Cooked rice, to serve.
