James Martin mussels with coconut milk and Thai sauce recipe on James Martin’s Saturday Morning

James Martin served up tasty mussels with coconut milk and Thai sauce on James Martin’s Saturday Morning.

The ingredients are: 2kg fresh mussels and 400ml coconut milk.

For the paste: 1 x 10cm fresh ginger or galangal, 1 garlic clove, 1 bunch coriander, 2 limes, 2 green chillies, 2 lemongrass, 4 kaffir lime leaves, 1 tbs fish sauce, 1 tbs soy sauce, 1 shallot peeled and diced.

To serve: 1 lime juice and zest and A few Thai basil and coriander leaves.
