James Martin potato cakes with mustard cream sauce and deep fried eggs with panko breadcrumbs recipe

James Martin served up tasty potato cakes with mustard cream sauce and deep fried eggs with panko breadcrumbs on James Martin’s Saturday Morning.

The ingredients for the potato cakes are: 600g mashed potato, 1 small bunch parsley chopped, 1 egg beaten, 6 slices Parma ham sliced, 1 tsp grain mustard and Veg oil for frying.

To coat: 25g seasoned flour and To fry – 50g butter.

For eggs: 4 large eggs, Salt and pepper, 100g plain flour, seasoned, 2 beaten eggs and 100g panko breadcrumbs.

For the sauce: 25g butter, 150ml double cream, 50ml white wine, 1 tbs grain mustard, 1 tsp Dijon mustard and Few chives chopped.

To serve: 6 to 12 air cured ham slices.
