Clodagh McKenna sunshine soup with carrot, ginger and pesto recipe on This Morning

Clodagh McKenna served up a tasty and healthy sunshine soup with carrot, ginger, pesto and bread on This Morning.

The ingredients are: 2 tbsps olive oil, 4 carrots, peeled and roughly chopped, 2 cloves of garlic, crushed, 2 inches of fresh ginger, peeled and grated, 1 onion, peeled and roughly chopped, 1 potato, peeled and roughly chopped and 1 litre of chicken or vegetable stock.

For the pesto: 100g fresh flat leaf parsley, 50g hazelnuts, toasted, 50g Parmesan cheese, freshly grated, 150ml extra virgin olive oil, Sea salt and freshly ground black pepper.
