John Torode rainbow rolls with Vietnamese rice paper recipe on John and Lisa’s Weekend Kitchen

John Torode and Lisa Faulkner served up tasty vegan rainbow rolls with Vietnamese rice paper on John and Lisa’s Weekend Kitchen.

The ingredients are: 1 carrot, ½ Daikon radish or white Radish, 3 spring onions, 1 small cucumber, 1 small Grapefruit, a good handful of coriander, a good handful of mint, a good handful Thai Basil, Chinese chives (or regular chives), 1 red chilli (thinly diced) and rice paper sheets.

Dressing: 1 red and 1 green Thai chilli (scud chillies), 2 tablespoons fish sauce (Use light soy to make it vegan), 2 tablespoons lime juice and 2 tablespoons palm sugar.
