James Martin served up French chicken blanquette (white chicken stew) with heart-shaped croutons on Saturday Morning with James Martin.

The ingredients are: 1 x 1.25 – 1.5kg chicken, 500 ml chicken stock, 200g baby onions, peeled but left whole, 250g small button mushrooms, cleaned, 6 sprigs of tarragon leaves picked, 250ml double cream, 50g butter, 8 slices bread, cut into heart-shaped croutons, 1 tablespoon finely chopped parsley, 5 egg yolks, Sea salt and freshly ground black pepper.
