Simon Rimmer Mexican Pork Burritos recipe on Eat the Week with Iceland

Simon Rimmer served up Mexican Pork Burritos with Guacamole on Eat the Week with Iceland.

The ingredients are: 2 Red Onions (Sliced), 1 Clove Of Garlic (Crushed), 3 Red Chillies (Chopped), 350g Minced Pork, 2 Limes (Juice), 1 Red Pepper (Very Thinly Sliced), 200g Long Grain Rice, 400ml Chicken Stock, 2 Tbsp Paprika, 1 Tbsp Thyme, 1 Tsp Cayenne Pepper, 75g Cooked Black Beans, 50ml Hot Mexican Sauce, Small Bunch Of Coriander (Chopped), 8 Large Soft Tortilla Wraps and 150g Grated Mozzarella.

For the guacamole: 3 Ripe Avocados (Roughly Chopped), 3 Limes (Juice), 2 Red Chillies (Finely Chopped), ½ Red Onion (Finely Chopped), 3 Tomatoes (Skinned And Chopped, Salt And Pepper.

To Serve: Sour Cream, Lime Wedges And Coriander.
