Simon Rimmer Goan Green Curry recipe on Eat the Week with Iceland

Simon Rimmer served up goan green curry with chicken for the Heaps family on Eat the Week with Iceland.

The ingredients are: 3 chicken breasts (cut into strips), 200g potatoes (cubed and blanched) and 151g peas.

To serve: Boiled rice and naan bread. Garnish with coriander and lime wedges.

For the curry Paste: 4 green birds eye chillies, 1 onion (roughly chopped), 1 tsp ground coriander, 1 clove of garlic, 2 tsp tamarind paste, 1 tbsp sugar and Oil for frying.

For the sauce: 1 clove of garlic, Salt to season, 400g spinach, Good handful of mint, 1 bunch of coriander and 400ml coconut milk.
