Paul Hollywood Pies and Puds: Savoury Choux Buns with Creamy Mushrooms (eco-mushrooms grown in coffee)

Mushrooms were a big feature on Paul Hollywood Pies and Puds today, as master baker Paul Hollywood went in search of the eco-friendly grown variety.

He visited the Espresso Mushroom Company on the south coast of England where they grow oyster mushrooms from coffee waste.

These specially grown mushrooms have a velvety skin, smooth firm texture and a peppery flavour. They are excellent for soups, risottos, casseroles and much more.

The growers claim that they are nutritionally good too, with positive health benefits as they’re high in protein and fibre, low calorie and contain zero fat and cholesterol. Oyster mushrooms are naturally rich in vitamins and nutrients including vitamin B and vitamin C and significant levels of zinc, iron, potassium, calcium, phosphorus, folic acid and niacin.

The lads from the Espresso Mushroom Company were invited to Paul’s kitchen to show him further mushroom samples and to help the master baker make is delicious savoury choux buns with creamy mushrooms dish.

His recipe has a wonderfully retro feel about it and the delicious savoury flavours, and the beautifully crisp choux pastry, looks guaranteed to excite the tastebuds.
