Hala El-Shafie served up tasty chorizo and vegetables frittata on Eat Well for Less.
Hala says: “A thick slice of Spanish omelette, packed with chorizo, peas and potatoes, can be enjoyed hot or cold. Keep a few slices handy in the fridge for tomorrow’s lunch, or a speedy midweek tea.”
The ingredients are: 1 tsp rapeseed oil, 1 onion, roughly chopped, 1 red pepper, seeds removed, chopped, 35g chorizo, skin removed and roughly chopped, 6 free-range eggs, 50ml milk, 1 garlic clove, finely chopped, 200g cooked potatoes, roughly chopped, 100g frozen peas, 2 tbsp chopped flatleaf parsley, green salad, to serve, sea salt and freshly ground black pepper.
