James Tanner served up tasty Moroccan sweet potatoes on today’s episode of Lorraine.
The ingredients are: 4 medium sweet potatoes, washed, 4 tbsp olive oil, 2 cloves garlic, crushed, 2 spring onions, finely chopped, 400g can chickpeas, Handful baby leaf spinach, Small bunch of mint, finely chopped and Zest and juice 1 lemon.
For the tahini yogurt: 60g Greek yogurt and 2bsp tahini.
To finish: 100g feta cheese, crumbled, 20g pine nuts, toasted and 100g pomegranate seeds.
