DJ BBQ served up tasty pulled pork burgers with a mix of rad and pineapple salsa on This Morning Pop Up Food Festival.
The ingredients are: 1 x 3kg piece of pork shoulder, blade in, skin and most of the fat removed.
For the baste: 250ml fresh unsweetened apple juice, 75ml fresh unsweetened pineapple juice and 75ml cider vinegar.
For the mix of rad: 2 tablespoons soft dark brown sugar, 1 heaped tablespoon sea salt, 1 tablespoon freshly ground black pepper, 1 tablespoon ground cumin, 1 tablespoon ground coriander, 1 tablespoon onion granules, 1 tablespoon garlic granules, ½ teaspoon mustard powder, ½ teaspoon chilli powder and ½ teaspoon dried chilli flakes.
For the grilled pineapple salsa: 1 medium pineapple, 250g ripe cherry tomatoes, on the vine, 1 fresh red chilli, 1 bunch of fresh coriander, leaves picked, Juice from 1 lime and Sea salt.
