Nigel Barden served up a tasty French rolled lamb breast with fennel seeds, orange and sumac dish on Radio 2 Drivetime with Simon Mayo.
The ingredients are: 700g lamb breast, bone removed, rolled & tied (ask your butcher to do this for you), 1 tbsp sumac, 3 tbsp mango chutney, 1 tsp fennel seeds, toasted and crushed, 1 tsp grated orange zest, 1 aubergine, sliced crossways, 1 large onion, finely sliced, 3 garlic cloves, crushed, 8 sprigs of fresh thyme, salt and black pepper.
