Nigel Barden served up a delicious chocolate orange macaroon torte on Radio 2 Drivetime with Simon Mayo.
The ingredients for the base are: 2 medium eggs whites, 50g light muscovado sugar, 100g ground almonds and 100g icing sugar, sifted.
For the chocolate mousse: 200g dark chocolate, 50% cocoa solids, broken into pieces, 2 medium organic eggs, 25g golden caster sugar, finely grated zest of 1 orange, 250ml whipping cream and 2 tbsp orange-flavoured liqueur, such as Cointreau or Grand Marnier.
