Madeleine Shaw served up a tasty aubergine stew with cauliflower rice on Sunday Brunch.
The ingredients are: 3 tbsp coconut oil or butter, 2 aubergines, cut into 5cm cubes, 2 red onions, finely chopped, 1 tbsp harissa, 4 garlic cloves, crushed, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp ground cinnamon, 400g can chopped tomatoes, 2 tbsp natural yoghurt, chopped fresh coriander, to serve and salt, to taste.
For the cauliflower rice: 1 cauliflower, stalk removed and roughly chopped, 1 tbsp coconut oil or butter, 1 tsp turmeric and ¼ tsp ground ginger.
