Ching-He Huang served up tasty griddled duck skewers on spring onion jian bing pancakes for Johnny Vegas on Saturday Kitchen.
The ingredients for the spiced skewered duck are: 400g free-range duck breasts, skinned, cut into 3mm slices at a 45 degree angle and 2 tbsp rapeseed oil, for frying.
For the spice marinade: 1 tsp ground cumin, 1 tsp fennel seeds, 1 tsp dried chilli flakes, ½ tsp ground turmeric, ½ tsp sea salt, ½ tsp coarsley ground black pepper, 2 tbsp Shaoxing rice wine or dry sherry, 2 tbsp low-sodium light soy sauce and 3 tbsp peanut oil.
