Rosemary Shrager served up a tasty red wine jus to serve with a spatchcocked poussin, cabbage and bacon dish on Chopping Block.
The ingredients for the sauce include: butter, chopped shallot, chopped carrot, chopped leak, chopped bacon, vinegar, red current jelly, red wine, bay leaf, thyme, tomato puree, drop of Madeira wine, salt and pepper to season.
