Ken Hom and Phil Vickery served up a tasty Chinese chicken curry on This Morning’s Chinese Cookery speical: East Meets West.
The ingredients are: 450 g boneless chicken breasts, skinned, 1 egg white, 1 teaspoon salt, 2 teaspoons cornflour, 225 g red or green peppers, 1 tablespoon garlic, finely chopped, 300 ml groundnut or vegetable oil or water, 1 tablespoon groundnut or vegetable oil, 140 ml chicken stock, 1½ tablespoons Madras curry paste, 2 teaspoons sugar, 1½ tablespoons Shaoxing rice wine or dry sherry, 1½ tablespoons light soy sauce and 1 teaspoon cornflour, blended with 1 tablespoon water.
