John Whaite served up a tasty vegetable and pearl barley broth on today’s episode of Lorraine.
The ingredients are: 2 tbsp olive oil, 1 large onion, or 2 shallots, finely sliced, Salt and pepper, 1 large garlic clove, un-peeled, 1 tbsp tomato puree, 1 parsnip, cleaned and cut into 1cm dice, 3 carrots, cut into 1cm dice, 1 leek, cleaned and finely sliced, 75g pearl barley, 1 litre vegetable stock, 1 bay leaf, 3 strips lemon peel, 150g asparagus spears, cut into 2cm chunks, 100g frozen petit pois, defrosted, 4 sprigs fresh thyme and Small handful freshly chopped parsley.
