James Tanner served up a tasty speedy chicken chasseur with parsley mash on today’s episode of Lorraine.
The ingredients: 1 tbsp flour to dust, 4 skin on boneless chicken thighs, 2 large skin on chicken breasts, cut into half across, Olive oil, for frying, 25g butter, 2 chopped shallots, 2 cloves garlic, minced, 200g button mushrooms, sliced, 2 tbsp tomato puree, 225ml dry white wine, 500ml chicken stock, 1 bay leaf and 1 tbsp chopped tarragon.
