Mary Berry served up a tasty tomato and basil salad with whipped goat’s cheese and Parma ham on Mary Berry’s Foolproof Cooking.
Mary says: “Look for the firm ripe tomatoes, using as many different varieties as you can for the best effect.”
The ingredients are: 150g soft goat’s cheese, 100ml double cream, lightly whipped, 1.5kg mixed tomatoes, 4-6 spring onions, sliced on the diagonal, 1 handful basil leaves, left whole, 6 slices of Parma ham, coarse seal salt, freshly ground black pepper and chunky bread, to serve.
For The Basil Dressing: 1 garlic clove, crushed, 6 tbsp olive oil, 2 tbsp white wine vinegar, 1 tsp sugar and 1 bunch of basil, chopped.
