Mary Berry served up a tasty tomato soup that can be made in ten minutes using ingredients from the store cupboard on Mary Berry’s Foolproof Cooking.
Mary says: “With no onions to chop or tomatoes to skin, this soup is quick, easy and delicious. In fact, it is one of my favourite family recipes, as I always have the ingredients in the cupboard.”
The ingredients are: 6 sun-dried tomatoes in oil, 2 garlic cloves, crushed, 3 x 400g tin chopped tomatoes, 500ml chicken or vegetable stock, 1 tbsp caster sugar, 150ml full-fat milk, 150ml double cream, salt and freshly ground black pepper and 3–4 tsp basil pesto, to serve.
