Mary Berry and Paul Hollywood made a delicious Sussex pond pudding using a whole lemon, mascavado sugar and apples on The Best Dishes Ever with Ainsley Harriott.
Mary says: “I love the traditional Sussex pond pudding but the whole thing always collapses when served so I thought it would be a good idea to pack the pudding with apples (as well as traditional lemon). The result is even more delicious!”
The ingredients for the suet crust are: 225g self-raising flour, plus extra for dusting, 100g shredded suet and 75ml milk.
For the filling: 3 Cox’s apples, 150g butter, cut into cubes, plus extra for greasing, 175g light muscovado sugar and 1 large lemon.
To serve: cream or custard.
